An innovative menu, a delicious mix of flavours, impeccable presentation and fantastic service followed days of preparation by Fabio Watanabe and his team of culinary students.
Fabio, who represented his home country Brazil as a finalist in the prestigious Bocuse d’Or competition in 2013, has spent the last 3 months at the Culinary Arts Academy studying on the Swiss Pastry and Chocolate Arts course and jumped at the opportunity when he was asked to prepare a meal for 8 journalists from Brazil. The dinner, held at César Ritz Colleges in Lucerne, was one stop on a familiarisation journey for the journalists, in Switzerland to discover the gastronomical delights of the country.
From an amuse bouche based on a typical Swiss fondue, a surprising apple soup, perfectly cooked deer and a dessert mixing the flavours of chocolate and lavender, the menu was a delight for both the eyes and tastebuds!
